While everything is roasting, put together a fresh bean salad with a can of chickpeas, a handful of herbs, a drizzle of olive oil, and a squeeze of lime juice. Serve over roasted veggies and enjoy as soon as you make it for lunch. Or portion it out into lunchboxes to enjoy throughout the week. No need to fiddle with the dressing; just add a drizzle of oil and a squeeze of lime juice before you start. The flexibility of this recipe makes it especially budget-friendly. Use whatever root vegetables you have on hand or that are on sale at your grocery store. Buy pepitas in bulk or use another nut or seed you already have in your pantry – they’re delicious no matter how you prepare them.
